Savory Cranberry Rice
- Crisco® Butter Flavor No-Stick Cooking Spray
- 1 (9.6 oz.) jar Dickinson's® Cranberry Relish
- 1 apple chopped
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- Juice and grated peel from one lemon
- 1 tablespoon chopped parsley
- 2 cups cooked white or brown rice
- 1 large egg well beaten
- 1/4 cup butter melted and cooled
- HEAT oven to 350°F. Spray 1-quart baking dish with no-stick cooking spray. Stir together all ingredients in medium bowl. Place in prepared baking dish. Bake 35 to 40 minutes.
- Serve with fish or poultry.
Yield: 6 to 8 servings
