Apricot Glazed Carrots


  • 1 pound fresh carrots peeled and sliced (or mini carrots, sliced if desired)
  • Water
  • 2 tablespoons melted butter
  • 1/2 cup Dickinson's® Pure Patterson Apricot Preserves
  • or Dickinson's® Purely Fruit® Apricot Spreadable Fruit
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground mace or nutmeg


  1. COOK carrots in water in saucepan over medium high heat until tender, stirring occasionally, about 10-15 minutes. Meanwhile, combine preserves, butter, lemon juice, salt and mace in small bowl. Drain carrots and return to saucepan over low heat. Pour preserves mixture over carrots. Cook until carrots are evenly glazed and thoroughly heated.

Yield: 4-6 servings
