Sweet 'n' Hot Asian Meatloaf

1 jar DICKINSON’S® Sweet 'n' Hot Pepper & Onion Relish

2 lbs. Ground Chuck

2 Eggs

1 Apple, peeled & chopped

1 c. Bread Crumbs

2 tsp. Curry Powder

2 tsp. Salt

Sauce:

1/2 jar DICKINSON’S® Pure Patterson Apricot Preserves

2-3 Tbsp. DICKINSON’S® Premium Tomato Ketchup

2-3 Tbsp. Prepared Horseradish

1/2 tsp. Ground Ginger

Preheat oven to 350°F. Mix relish with remaining ingredients. Pat into a large loaf pan. Bake for 1 hour. Combine sauce ingredients and set aside. Remove meatloaf from oven and serve with sauce. Makes 6-8 servings.

SERVING IDEAS: Serve with hot garlic mashed potatoes.

NOTE: Meatloaf goes continental with the taste of curry. Save leftovers for open-faced sandwiches later in the week.
